Keto Vanilla Pudding

Simple but amazing Vanilla bean pudding
- 1 Vanilla Bean
- 4 Cups Heavy Cream
- 6 Tbsp Monk Fruit Sweetner
- 6 Egg Yolks
Warm cream in large pot over medium low heat
Split Vanilla bean and scrape seeds out. Add to cream.
Heat until it starts to slightly steam
Wisk together Egg Yolks and Sweetener.
Pour approx 1/2 cup of the cream mixture into the egg mixture and combine. Add cream 1/2 cup at a time until all combined.
Move mixture back to pot and heat over medium high heat stirring regularly until thick enough to coat a spoon without dripping off.
Remove from heat and strain through mesh strainer into large bowl.
Place bowl in another bowl of ice and mix until pudding is cool enough to touch.
