Ingredients
  

  • 1 1/2 Cups Almond Flour
  • 1/2 Cup Coconut Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 4 Eggs Room Temperature
  • 1/3 Cup Olive oil
  • 1 Cup Pumpkin Puree
  • 1 TBSP Pumpkin Pie Spice
  • 2/3 Cup Monk Fruit Sweetener
  • 1/4 Cup Almond Milk

Instructions
 

Cake

  • Preheat oven to 350°
  • Line loaf pan with Parchment paper
  • Whisk together dry ingredients; Almond Flour, Coconut Flour, Baking Soda, Cinnamon and Salt
  • Combine wet ingredients; Eggs, Coconut Oil, Pumpkin puree, Pumpkin Pie Spice, Monk fruit, Almond Milk.
  • Add wet ingredients to the dry ingredients and combine.
  • Transfer mix to pan and Bake for 65-75 minutes, until a toothpick comes out clean.
  • If you prefer to use a muffin pan adjust bake take to 30-40 minutes.
  • Let bread cool on counter before removing from pan.
