Pumpkin Bread
As close to Keto Pumpkin Bread as you can get.
Ingredients
- 1 1/2 Cups Almond Flour
- 1/2 Cup Coconut Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Cinnamon
- 1/4 tsp Salt
- 4 Eggs Room Temperature
- 1/3 Cup Olive oil
- 1 Cup Pumpkin Puree
- 1 TBSP Pumpkin Pie Spice
- 2/3 Cup Monk Fruit Sweetener
- 1/4 Cup Almond Milk
Instructions
Cake
- Preheat oven to 350°
- Line loaf pan with Parchment paper
- Whisk together dry ingredients; Almond Flour, Coconut Flour, Baking Soda, Cinnamon and Salt
- Combine wet ingredients; Eggs, Coconut Oil, Pumpkin puree, Pumpkin Pie Spice, Monk fruit, Almond Milk.
- Add wet ingredients to the dry ingredients and combine.
- Transfer mix to pan and Bake for 65-75 minutes, until a toothpick comes out clean.
- If you prefer to use a muffin pan adjust bake take to 30-40 minutes.
- Let bread cool on counter before removing from pan.
