Keto Curry Chicken Salad

A great meal to have in the fridge that is great as a wrap or on its own.

Ingredients
  

  • 1 lb Chicken Breast
  • 4 Green Onions Chopped
  • 2 Stalks Celery Chopped
  • 1/3 Cup Cashews Lightly Chopped
  • 1/4 Cup Cilantro Chopped
  • 1 Cup Mayonnaise
  • 1 Tbsp Lemon Juice
  • 5 tsp Powered Sweetener
  • 2 tsp Curry Powder
  • 1 tsp Ground Tumeric
  • 1 tsp Ground Cumin
  • Salt and Pepper To Taste

Instructions
 

  • Cut the chicken into small bite sized pieces and season with Salt and pepper.
  • Lightly oil and pan and cook the chicken until it's cooked all they way through. Move it to a container and refrigerate.
  • In a small bowl combine Mayonnaise, Lemon Juice, Powdered Sweetener, Curry Powder, Turmeric and Cumin.
  • In a large bowl combine the chilled chicken, Green Onions, Celery, Cashews and Cilantro.
  • Add Mayonnaise mixture to the Chicken and combine well.
  • Refrigerate for a couple hours or until ready to eat.
    The flavor improves as the chicken has time to sit in the sauce and absorb the goodness.
