Keto Curry Chicken Salad
A great meal to have in the fridge that is great as a wrap or on its own.
Ingredients
- 1 lb Chicken Breast
- 4 Green Onions Chopped
- 2 Stalks Celery Chopped
- 1/3 Cup Cashews Lightly Chopped
- 1/4 Cup Cilantro Chopped
- 1 Cup Mayonnaise
- 1 Tbsp Lemon Juice
- 5 tsp Powered Sweetener
- 2 tsp Curry Powder
- 1 tsp Ground Tumeric
- 1 tsp Ground Cumin
- Salt and Pepper To Taste
Instructions
- Cut the chicken into small bite sized pieces and season with Salt and pepper.
- Lightly oil and pan and cook the chicken until it's cooked all they way through. Move it to a container and refrigerate.
- In a small bowl combine Mayonnaise, Lemon Juice, Powdered Sweetener, Curry Powder, Turmeric and Cumin.
- In a large bowl combine the chilled chicken, Green Onions, Celery, Cashews and Cilantro.
- Add Mayonnaise mixture to the Chicken and combine well.
- Refrigerate for a couple hours or until ready to eat. The flavor improves as the chicken has time to sit in the sauce and absorb the goodness.
