Keto Vanilla Pudding
Simple but amazing Vanilla bean pudding
Ingredients
- 1 Vanilla Bean
- 4 Cups Heavy Cream
- 6 Tbsp Monk Fruit Sweetner
- 6 Egg Yolks
Instructions
- Warm cream in large pot over medium low heat
- Split Vanilla bean and scrape seeds out. Add to cream.
- Heat until it starts to slightly steam
- Wisk together Egg Yolks and Sweetener.
- Pour approx 1/2 cup of the cream mixture into the egg mixture and combine. Add cream 1/2 cup at a time until all combined.
- Move mixture back to pot and heat over medium high heat stirring regularly until thick enough to coat a spoon without dripping off.
- Remove from heat and strain through mesh strainer into large bowl.
Place bowl in another bowl of ice and mix until pudding is cool enough to touch.
- Cool in refrigerator until cold.
