Keto Vanilla Pudding

Simple but amazing Vanilla bean pudding

Ingredients
  

  • 1 Vanilla Bean
  • 4 Cups Heavy Cream
  • 6 Tbsp Monk Fruit Sweetner
  • 6 Egg Yolks

Instructions
 

  • Warm cream in large pot over medium low heat
  • Split Vanilla bean and scrape seeds out. Add to cream.
  • Heat until it starts to slightly steam
  • Wisk together Egg Yolks and Sweetener.
  • Pour approx 1/2 cup of the cream mixture into the egg mixture and combine. Add cream 1/2 cup at a time until all combined.
  • Move mixture back to pot and heat over medium high heat stirring regularly until thick enough to coat a spoon without dripping off.
  • Remove from heat and strain through mesh strainer into large bowl.

Place bowl in another bowl of ice and mix until pudding is cool enough to touch.

  • Cool in refrigerator until cold.
