Line 2 baking sheets with parchment paper.
Combine softened butter with the granulated sugar of your choice and beat until smooth.
Add vanilla then eggs, one at a time and combine until smooth.
Slowly add almond flour until totally incorporated.
Scoop dough into 1 inch balls onto baking sheets, leaving 1 inch between each.
Flatten the dough down to 1/2 in high.
Refrigerate dough for at least 30 minutes
Preheat oven to 350°
Bake for 17-19 minutes, or until cookies just start to brown on the edges.
Allow to cool completely on cooling rack before eating.
