Cut your choice of chicken pieces into tender sized strips
Crush pork rids to crumbs, you may want to pulse in a food processor to speed up process. Combine dry ingredients and mix well, place into a shallow pan or baking dish.
Whisk eggs together in a bowl
Heat large skillet with 1"-2" of oil for frying
Drench Chicken Pieces in egg, Cover in crumb mixture and fry until dark brown rotating once.
Place chicken on a paper towel lined plate to absorb extra oil.
Serve with your favorite Dipping Sauces.
