Keto Sugar Cookies
A simple but delicious keto friendly cookie. Makes 24 cookies with approximately 1 gram of carbs each.
Ingredients
- 1/2 cup Salted Butter Softened
- 1 1/2 cup Granulated Sweetener
- 2 Eggs
- 1 Tbsp Vanilla
- 4 cups Almond flour
Instructions
- Line 2 baking sheets with parchment paper.
- Combine softened butter with the granulated sugar of your choice and beat until smooth.
- Add vanilla then eggs, one at a time and combine until smooth.
- Slowly add almond flour until totally incorporated.
- Scoop dough into 1 inch balls onto baking sheets, leaving 1 inch between each.
- Flatten the dough down to 1/2 in high.
- Refrigerate dough for at least 30 minutes
- Preheat oven to 350°
- Bake for 17-19 minutes, or until cookies just start to brown on the edges.
- Allow to cool completely on cooling rack before eating.
