Keto Sugar Cookies

A simple but delicious keto friendly cookie. Makes 24 cookies with approximately 1 gram of carbs each.

Ingredients
  

  • 1/2 cup Salted Butter Softened
  • 1 1/2 cup Granulated Sweetener
  • 2 Eggs
  • 1 Tbsp Vanilla
  • 4 cups Almond flour

Instructions
 

  • Line 2 baking sheets with parchment paper.
  • Combine softened butter with the granulated sugar of your choice and beat until smooth.
  • Add vanilla then eggs, one at a time and combine until smooth.
  • Slowly add almond flour until totally incorporated.
  • Scoop dough into 1 inch balls onto baking sheets, leaving 1 inch between each.
  • Flatten the dough down to 1/2 in high.
  • Refrigerate dough for at least 30 minutes
  • Preheat oven to 350°
  • Bake for 17-19 minutes, or until cookies just start to brown on the edges.
  • Allow to cool completely on cooling rack before eating.
