Ingredients
  

  • 1 1/2 cups Almond Flour
  • 1/2 Cup Coconut Flour
  • 2 tsp Cinnamon
  • 2 tsp Cream of Tartar
  • 1 tsp Baking Soda
  • 1/2 tsp Xanthan Gum
  • Pinch Kosher Salt
  • 1/2 Cup Butter
  • 3/4 Cup Monkfruit Sweetener
  • 1 tsp Vanilla Extract
  • 2 Large Eggs

Coating

  • 1 tsp Cinnamon
  • 2 Tbsp Monkfruit Sweetener

Instructions
 

  • Preheat oven to 350 F
  • Wisk together Almond flour, coconut flour, cinnamon, cream of tartar, baking soda, xanthan gum, and salt.
  • In another bowl cream together butter, sweetener, vanilla and eggs.
  • Combine wet and dry ingredients.
  • In a small bowl combine the cinnamon and sweetener for the coating.
  • Roll dough into 1 1/2 balls and roll in the coating until well coated.
  • Place dough onto baking sheets lined with parchment paper.
  • Flatten cookies down to 1/2" thick.
  • Bake cookies for 12-15 minutes until just starting to brown.
  • Let cookies cool completely then enjoy!
