Keto Chicken and Biscuits

Ingredients
  

  • 1 Tbsp Butter
  • 2 ribs Celery chopped
  • 1/4 Cup White onion chopped
  • 2 Tbsp Thyme Chopped
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Poultry Seasoning
  • 1 tsp Arrowroot powder
  • 2 Cups Chicken Broth
  • 1/2 Cup Heavy Whipping Cream
  • 2 1/2 Cups Cooked Chicken
  • 1/2 Cup Mixed Veggies

Biscuit Topping

  • 1 1/2 Cups Almond Flour
  • 1 Tbsp Garlic Powder
  • 1 1/2 tsp baking soda
  • 3 Tbsp Cold Butter Diced into cubes
  • 1 Egg
  • 1/4 Cup Heavy Whipping Cream
  • 1/2 Cup Shredded Cheddar Cheese

Instructions
 

  • In a dutch oven, or any other oven-safe large cooking pot, melt the butter and saute the celery, and onion until translucent.
  • Add the herbs, almond flour, and arrowroot powder and stir well to combine.
  • Let cook down for 1 minute to remove the four taste.
  • Slowly stir in the chicken stock and bring to a simmer for 10 to 15 minutes until thickened.
  • Add Heavy Cream and simmer for 10 minutes.
  • Add Chicken and mixed veggies leave on low while preparing the biscuit topping.

Biscuit Topping

  • Combine Almond Flour, Garlic Powder and baking powder.
  • Incorporate butter into the dry ingredients.
  • Add Cream and Egg
  • Add Shredded Cheese
  • Drop Dough by spoon fulls into the stew mixture evenly with space enough for expansion.
  • Bake at 350 F for 20-30 minutes or until Golden Brown and cooked through.
  • Serve Warm
