Keto Chicken and Biscuits
Ingredients
- 1 Tbsp Butter
- 2 ribs Celery chopped
- 1/4 Cup White onion chopped
- 2 Tbsp Thyme Chopped
- 1 Tbsp Garlic Powder
- 1 Tbsp Poultry Seasoning
- 1 tsp Arrowroot powder
- 2 Cups Chicken Broth
- 1/2 Cup Heavy Whipping Cream
- 2 1/2 Cups Cooked Chicken
- 1/2 Cup Mixed Veggies
Biscuit Topping
- 1 1/2 Cups Almond Flour
- 1 Tbsp Garlic Powder
- 1 1/2 tsp baking soda
- 3 Tbsp Cold Butter Diced into cubes
- 1 Egg
- 1/4 Cup Heavy Whipping Cream
- 1/2 Cup Shredded Cheddar Cheese
Instructions
- In a dutch oven, or any other oven-safe large cooking pot, melt the butter and saute the celery, and onion until translucent.
- Add the herbs, almond flour, and arrowroot powder and stir well to combine.
- Let cook down for 1 minute to remove the four taste.
- Slowly stir in the chicken stock and bring to a simmer for 10 to 15 minutes until thickened.
- Add Heavy Cream and simmer for 10 minutes.
- Add Chicken and mixed veggies leave on low while preparing the biscuit topping.
Biscuit Topping
- Combine Almond Flour, Garlic Powder and baking powder.
- Incorporate butter into the dry ingredients.
- Add Cream and Egg
- Add Shredded Cheese
- Drop Dough by spoon fulls into the stew mixture evenly with space enough for expansion.
- Bake at 350 F for 20-30 minutes or until Golden Brown and cooked through.
- Serve Warm
