Keto Snickerdoodles
Think and fluffy and delicious
Ingredients
- 1 1/2 cups Almond Flour
- 1/2 Cup Coconut Flour
- 2 tsp Cinnamon
- 2 tsp Cream of Tartar
- 1 tsp Baking Soda
- 1/2 tsp Xanthan Gum
- Pinch Kosher Salt
- 1/2 Cup Butter
- 3/4 Cup Monkfruit Sweetener
- 1 tsp Vanilla Extract
- 2 Large Eggs
Coating
- 1 tsp Cinnamon
- 2 Tbsp Monkfruit Sweetener
Instructions
- Preheat oven to 350 F
- Wisk together Almond flour, coconut flour, cinnamon, cream of tartar, baking soda, xanthan gum, and salt.
- In another bowl cream together butter, sweetener, vanilla and eggs.
- Combine wet and dry ingredients.
- In a small bowl combine the cinnamon and sweetener for the coating.
- Roll dough into 1 1/2 balls and roll in the coating until well coated.
- Place dough onto baking sheets lined with parchment paper.
- Flatten cookies down to 1/2" thick.
- Bake cookies for 12-15 minutes until just starting to brown.
- Let cookies cool completely then enjoy!
