White Chocolate Coconut Macadamia Nut Cookies

A mouthful to say, especially when you are stuffing your mouth full of these awesome cookies.

Ingredients
  

  • 11/2 Cup Almond Flour
  • 1/2 Cup Shredded Coconut
  • 1 Tbsp Gelatin
  • 1/2 tsp Baking Soda
  • 1/2 tsp Kosher Salt
  • 1/4 Cup Butter
  • 1/2 Cup Golden Monkfruit Sweetener
  • 1/4 Cup Monkfruit Sweetener
  • 1 Large Egg
  • 1/2 tsp Vanilla
  • 1/2 Cup Chopped Macadamia Nuts
  • 1/3 Cup ChocZero White Chocolate Chips

Instructions
 

  • Preheat Oven to 325 F
  • Whisk together dry ingredients; Almond flour, shredded coconut, gelatin, baking soda, and salt.
  • Cream butter with sweeteners.
  • Combine Egg with butter mix
  • Add dry ingredients to wet ingredients and combine well.
  • Combine in chopped Macadamia Nuts.
  • Roll dough into 1" balls and place them onto baking pans lined with parchment paper and flatted down to 1/2" thick
  • Spread white chocolate chips over the cookies and press them in. (The chips don't mix in very evenly when mixing).
  • Bake 15-17 minutes until just brown on the edges.
  • Make sure to let the cookies cool before eating. (This is extra super important, and a step often missed by the author)
