White Chocolate Coconut Macadamia Nut Cookies
A mouthful to say, especially when you are stuffing your mouth full of these awesome cookies.
Ingredients
- 11/2 Cup Almond Flour
- 1/2 Cup Shredded Coconut
- 1 Tbsp Gelatin
- 1/2 tsp Baking Soda
- 1/2 tsp Kosher Salt
- 1/4 Cup Butter
- 1/2 Cup Golden Monkfruit Sweetener
- 1/4 Cup Monkfruit Sweetener
- 1 Large Egg
- 1/2 tsp Vanilla
- 1/2 Cup Chopped Macadamia Nuts
- 1/3 Cup ChocZero White Chocolate Chips
Instructions
- Preheat Oven to 325 F
- Whisk together dry ingredients; Almond flour, shredded coconut, gelatin, baking soda, and salt.
- Cream butter with sweeteners.
- Combine Egg with butter mix
- Add dry ingredients to wet ingredients and combine well.
- Combine in chopped Macadamia Nuts.
- Roll dough into 1" balls and place them onto baking pans lined with parchment paper and flatted down to 1/2" thick
- Spread white chocolate chips over the cookies and press them in. (The chips don't mix in very evenly when mixing).
- Bake 15-17 minutes until just brown on the edges.
- Make sure to let the cookies cool before eating. (This is extra super important, and a step often missed by the author)
