Preheat Oven to 325 F
Whisk together dry ingredients; Almond flour, shredded coconut, gelatin, baking soda, and salt.
Cream butter with sweeteners.
Combine Egg with butter mix
Add dry ingredients to wet ingredients and combine well.
Combine in chopped Macadamia Nuts.
Roll dough into 1" balls and place them onto baking pans lined with parchment paper and flatted down to 1/2" thick
Spread white chocolate chips over the cookies and press them in. (The chips don't mix in very evenly when mixing).
Bake 15-17 minutes until just brown on the edges.
Make sure to let the cookies cool before eating. (This is extra super important, and a step often missed by the author)
