Keto Instant Pot Mongolian Beef

Ingredients
  

  • 2 Lbs Beef Tri tip, Top Sirloin, or Flank Streak
  • 2 Tbsp Vegetable oil
  • 1 tsp Minced Ginger
  • 3-4 Cloves Minced Garlic
  • 1/2 Cup Water
  • 1 Cup Low Sodium Soy Sauce
  • 1 1/2 Cup Golden Monk Fruit Sweetener
  • 2 Tbsp Arrowroot Powder
  • 3 Tbsp Cold Water

Instructions
 

  • Cut Beef into thin bite sized pieces against the grain
  • Heat pan and add oil. Seer Beef on each side until browned. Transfer to plate when browned.
  • Add Garlic, Ginger, Water, soy sauce and sweetener to pressure cooker and still to combine. Add meet and any accumulated juices.
  • Close lid and set to cook 12 minutes on high pressure.
  • Once done turn off pressure cooker, quick release pressure, then remove lid.
  • Combine Arrowroot powder and cold water in a small bowl or mug.
  • Turn pressure cooker on saute and add arrowroot mixture. Stir well until it just starts to boil then turn off.
  • Serve while still hot with Cauliflower Fried Rice or Cabbage Salad.
